NEWBIE looking for advice on build/purchase/carb

So there is too much information on this site. I have some questions that may be redundant , but at this point I feel overwhelmed. I have a very strong running 258 in my 84 CJ7, but want to do a stroker. I'm a mechanic for the Coast Guard, so I feel very comfortable doing the build myself, but sometimes I'd rather pay someone to do it for their experience specifically with the item at hand.

That being said who makes the best/most reliable (opinion I realize) stroker? My plan is to run a carburetor and I already have an offy dual plane intake and DUI distributor on my 258.
I know with FI you should run premium,, , but what about carb'ed applications? Would you just have to lower timing?
What differences can you expect with a good running FI vs Carb setup?

You could run the same carb and ignition set-up in a stroker, but your Offy intake would need to be raised to fit properly on the 4.0L head so you might have to get creative. The 4.0L head does offer vastly improved airflow and a faster burning chamber compared to the 258 head, so you should make good power with less timing advance.
A carb set-up won't have the cold start driveability and emissions of an FI set-up but it can still run very well when properly dialled in. The minimum carb size you'll need is 390cfm, but something closer to 450cfm would be preferable.

I built a 4.7 Stroker . I used my 258 intake manifold. I had to file notches in the bottom of the intake lobes, to sit it on top of the studs on the side of the head. Then I had to replace the combination washers that hold the intake & exhaust manifold. I used 1/4 in steel, & made them triangular.
I also used a Weber 2bbl.carb. It worked ok. But it just didn't seem to have the getup I thought it should. So I switched to a Motorcraft 2bbl. And it came to life! It run Great! And pulls like a JohnDeer tractor!
I found the Motorcraft carb. & adapter on eBay. It's a sweet setup!
