So there is too much information on this site. I have some questions that may be redundant

, but at this point I feel overwhelmed. I have a very strong running 258 in my 84 CJ7, but want to do a stroker. I'm a mechanic for the Coast Guard, so I feel very comfortable doing the build myself, but sometimes I'd rather pay someone to do it for their experience specifically with the item at hand.
That being said who makes the best/most reliable (opinion I realize) stroker? My plan is to run a carburetor and I already have an offy dual plane intake and DUI distributor on my 258.
I know with FI you should run premium,, , but what about carb'ed applications? Would you just have to lower timing?
What differences can you expect with a good running FI vs Carb setup?
