Will this setup be ideal for 80%DD and 20% off road? Also, will I have any problems running pump gas with it (87, 89 & 91)? I am 16ft above sea level ....

My engine is a short rod engine, zero deck and .041 head gasket. My dcr ended up at 7.75. I run 87 octane with no pinging. I think you could run 8.0 dcr with a tight quench (around .040) on 87 gas. I have over 12,000 miles and still running strong...knock on wood...

Looks like you've got your combo pretty well nailed down. If you shave 0.020" from the block and you use the 4.0 rods with KB IC944 pistons, you'll be left with a deck clearance of ~0.008", SCR of ~9.6:1, and a quench of 0.051" (assuming 0.043" HG). The Crane 753905 is a nice cam for daily driver use and yields a wide torque curve. I ran it on my stroker until one lobe and two lifters died after 34k miles (I think the lifters were at fault) and it pulled 17" vacuum at idle.
