Stroker stumbling and dying

Hey guys
Been a while since I was on here but just now like a year later I finally have my jeeps stroker up and running... Kinda the problem that I have with it that when you are driving it at anywhere around 1500-1800 rpm and then "punch" it it starts acting like it isn't getting any fuel and then it falls flat on its face till you let off the pedal or tap it a few times.. I have an aem wideband set up an it is reading kinda all over the place anywhere from 14.4-16.9 with little to no consistency. There aren't any vacuum leak im aware of either since I have a vacuum gauge. I am really scratching my head on this one. I had a map sensor voltage too high CEL so I bought a new one just to eliminate that but still the issues persist. If anyone can help with this at all I would really appreciate it since it has been 2 years since my jeep was officially driveable and this is the last thing holding it up.
Tomorrow I am going to check the cam sensor for proper indexing but im at a loss here.

I got the wideband sensor as well.

First thing, is drive with the O2 sensor disconnected. If nothing changes, obviously the problem is elsewhere.

The manual says that the O2 sensor varies from 0-1V, they are wrong (for my 98) anyway.

The only way I could get mine to run normaly is to have my wideband analogue output between 0 for rich and 4.5 for lean.
