What is going on with this thing?

So I blew the second freeze plug out of the engine today when I revved it to 4800 pretty hard in first gear...
This is the second time it's done it.. first time, same scenariogot into it pretty hard and pop! last freeze plug toward the back. It does not over heat, but I feel it's a tad warmer running than it should be. Gauge is at 210 (normal) with a new mopar sender It seems like it builds up pressure in the system pretty quickly. Standard water pump, 3 row, oversized aluminum radiator, electric fan with adjustable thermostat. 195 degree thermostat. 16 lb cap.
So I got paranoid and yanked the motor back out today. I was hoping I'd find the head gasket on upside down or something.. nope.
This motor has about 500 miles on it. Seems to be Alot of carbon build up on the pistons and combustion chambers. Look at these pics. Notice the head gasket pic between cyl 2-3, 3-4, 4-5.
It actually ran good.. dont get me wrong it's a little weaker than I think it should be but I'm also running the factory ecu.. is this head gasket blown? Felpro mls .

Two things are possibly happening. Either the thermostat isn't opening or the radiator cap isn't releasing pressure. Both are easy to remedy.

Did you notice if it was using antifreeze? or your new antifreeze was getting dirty/ brown in the reservoir in those 500 miles?
