Carbureted 4.0?

I have two 1998 zj 4.0 engines that were intended for a rock crawler that we decided not to use, and I have a 1936 Ford hot rod project I plan on building over the winter.
What I would love to do is convert one engine to carburetion and run it with no computer so I have an old school hot rod six. I'm thinking strip the fuel injection, replace it with a Clifford carbureted manifold for a 4.0 head, build a custom header, put on a DUI distributor and I should be getting close. What other issues am I going to run into?

I'm not sure how it is with the 4.0, but I have a 4.6 stroker w/ a carburetor. I have the clifford intake and a Holley 390, but plan on getting my 470 setup right.

I'm planning on turning a EFI horseshoe intake into a carb intake, got the idea from a powernation video.

go to 8:30 in the video and you'll see where they modify the intake.

So I got my $30 pick-n-pull intake and an $15 ebay holley spacer. At little welding and this is what I came up with.

I wondered about doing this. Especially for cam break in on my dyno, which is set up for carburetor. I was going to use a Motorcraft magnetic pickup distributor with an MSD box.
