Puerto Rico Stroker

This is my first post. I have been asking allot of questions through PM and e-mails. I have been reading about allot of projects non-stop for about three weeks. I must say that it is the most informative site on stroker building! I need help in determining how much milling would I need for my block, and the dish size for my pistons. I am from Puerto Rico (Sea Level to approx 3,000 ft.), Highest octane fuel is 93. I am looking for a quench that would run good (without ping) with either a .44 or .51 head gasket. The .44 is getting hard to find. I am running a 5" lift on 33's, with 4:56 gears (Locked) with an AX-15 tranny. Mostly an off road rig, for weekend use, with some street driving. I do not mind running on 93 fuel.
Also, if I port and polish my head, will that change my combustion chamber from the factory 58cc? If yes, to how much? (estimated)

My machine work is scheduled to begin mid March. Any other suggestions (parts) for my build will be greatly appreciated. I am not too familiar with the mechanic terminology, so keep it simple. It would be awsome, if someone sent a copy of their suggestions on the Compression Ratio Calculator. Like I said before, any suggestions would be greatly appreciated.
