Installing new stroker longblock.....

My new stroker 4.7L longblock just showed up, built by Western Engine in colorado.
never messed with a Jeep stroker. I have the 4.0 out of my 2001 TJ and have just about all the brackets, access, and tins off and ready to put on the stroker.
I wanted to find out if there is somethings i should replace or look at before i go back in with this thing. I have already bought a new header, motor mounts, belt, and hoses. Is there anything that i should replace that im not thinking about.
The engine builder said the stock injectors are adequate being i live at sea level. Is this true? and what about stock fuel pump? anything i need to do about fuel pressure.
Do i need to look at a adjustable map sensor or anything in that area. I have a JET inline chip previoulsy, will i be able to use itt or need to use it.
Thermostat, what temp would work good in southeast texas. Its mostly hot here and not very cold winters.
Like i said i have done a little reasearch on here, but i have the feeling i don't know about everything. if you have any imformation, tips, parts list that will help with a successful install i would really appreciate it.

Bore and hone cylinders
Line hone main journals
Deck block
R&R pistons
Install ARP rod bolts
Resize big end of all rods
Balance rods and pistons
Machine grind crankshaft
Bake shotpeen tumble and magnaflux cylinder head
Install new bronze guide liners
3 angle performance valve job w/Serdi 100
Mill head gasket surface
Matchport intake and exhaust ports to gasket
Longblock assembly
9.3:1-9.5:1 depending on year of engine
