Adjustable map

The stroker has been running about a month now so pulled the plugs and they were dry/white. My idle surges every now and again so I can confidently say I am on the lean side.
I do not have a wideband so I don't have the ratio handy but I made DIY map adjuster, my questions are
what kind of volts are you running?
I can only adjust it when it's in an open loop, correct?
Increase volts = increase fuel, vice versa, correct?
