Why would you want a 180 or 190 thermostat vs. a 160, wouldn't lower be better, why and or why not?

On a fuel injected motor the ECU will see the low temp and set air/fuel ratios and timing accordingly which probably wouldn't be ideal for fuel consumption or power. If you could tune for it though, it could help a bit. I run 180* stat with no noticeable effect.
