New Stroker for Old Cherokee

Well, I've been a lurker here for quite some time and after a few speed bumps I'm ready to plunge into the world of a stroker motor. Just a little background on my plan/ideas....very basic a t this point. And please feel free to to guide, help or interfere if my lack of knowledge becomes too apparent.
Currently I have a 1983 Jeep Cherokee with a 4.2. It is the final year of the Full Size Cherokee (FSJ) It also has a T-5 transmission. Both are VERY tired and the time has come for a refresh. I picked up a 1997 4.0 and AX-15 well within my budget. I currently have a 258 crank pulled from a different 4.2.

One thing that I don not possess is the PCM or the wiring harness. I truly wanted to stay away from splicing that wiring into my ancient Cherokee. I was looking at running a Holley Sniper for two reasons: ease of wiring and keep the "look" as close to stock as possible. Does anyone foresee an issue with this type of fuel system?

Also, This is jut a cruising vehicle. I will not be wheeling or racing this. I would love for it to have enough torque to pull this brick around but don't need to break horsepower records. I'm looking for a build that will be fun, yet reliable as well.

I already sent a feeler out to Russ via email for his suggestions and vast knowledge and am eagerly awaiting his response. But I would also love to get feedback and knowledge from this forum as well. Thank you for your time and insight. It's greatly appreciated!
