Mid build deck/quench question

So I'm halfway through a 4.1 mini stroker build and have a deck/quench question. Specs so far:
4.0 block
232 crank
4.0 rods
677cp pistons .020+ 13cc dish
(pistons are US made NOS from 15-20 years ago)
Planning to use a mopar 28 cam and mopar 53010587AA .043 head gasket.
Cylinder head has not been worked on yet, I was just going to do a stock refresh on it.

The pre-build specs were showing that the pistons would be at deck height, and the block had no warp, so I did not have the block decked. Got the assembled short block back from the engine builder, and the pistons are actually .007 in the hole. (yea shoulda had them do a test mockup first, lesson learned) Combined with the .043 head gasket I'm looking at .050 quench. Tearing down the block again to mill .005 off the top will raise the CR another .2 which seems counterproductive and expensive. Is .050 quench acceptable on pump gas (91) with a static CR of 9.3 and dynamic CR of 8.3? Is there a thinner MLS head gasket I could use? It's not a race motor, it's being build for better low end torque, never over 4K rpm.
